dumpstered recipes

One of the great things about Dumpster Diving is that you never know beforehand what you will be cooking. So when I went to the market today, just before closing time, I was in fact very happy to find some aubergines (eggplant), tomatoes and red peppers (paprika). As usual the vendors at Ten Kate markt were very nice and allowed me to dive into their dumpsters at the same time as they were filling them. But I didn't expect the results of my cooking, it was so nice that even Rene was highly impressed :D

What I made:
* I cut the aubergines into small parts (big parts were impossible this time), washed them and soaked them into salt. Squeeze and add flower. Fry on high fire for 5 to 10 minutes.
* Make a souce out of the tomatoes and red paprika's. Add sambal, chili and hot paprika powder, koriander, flower, egg (replacement) and alternatively some soya milk.
* Put it all together in a bowl (alternatively put lasagna leaves in between) and leave it in the oven (180 degrees) for 20 minutes.
* Eat it with rice or pasta, or if you added the lasagna, eat it as such.

Aubergines are in fact one of my favourite veggies to cook with, you can do so much with them. You can burn them (just put them on the stove for 10-15 minutes), fry, grill or bake them with flower and herbs. The options are endless. And of course you can also make vegan Baba Ghanoush, one of the house favourite dishes (the non-vegan one can be bought at the Turkish shop around the corner, goes very nice for late breakfasts!).

As usual, there will be an open dinner on Thursday. This time, almost no-one of the usual suspects will be around (they're all floating around Europe) and we will wonder which surprises will show up. If you also want to come around, and don't know where we are at, write us.
