Vegan Carrot Cake!

Hey crew! Im back in delft for a few days, and have been doing more dumpstering here... got so many carrots we didnt know what to do with, so decided to make a cake! Having recently turned vegan, i made an attempt at my first non-egg/butter gateau... and I must say... it was brilliant! Tasted just like a real cake, if not better, so thought id pass on the recipe... its really simple!

Ingredients:

2 cups grated carrots
1 1/2 cups raisins
2 cups water
1 1/2 tsp cinnamon
1 1/2 tsp allspice
1/2 tsp cloves
1 cup sugar
1/2 tsp salt
3 cups flour
1 cup soy milk
2 tsp baking soda

Preparation:
Preheat the oven to 180 degrees C.
In a medium sized saucepan, gently simmer the carrots, raisins, water, and spices for 8-10 minutes. Add the sugar and salt and allow to cook for 2 more minutes. Remove from heat and allow to cool completely. (or until you get impatient, was still warm for me, and worked fine!)

In a large bowl, combine the flour and baking soda. Add the carrot mixture, along with the soy milk, and combine just until mixed. (I also added some nuts... do it!)

Lightly grease a 9x9 inch baking pan and pour in the batter. Bake for 1 hour, or until a toothpick inserted in the center comes out clean.

You can try frosting it with 'fake' butter, icing sugar and water, but i didnt and it was still great. lemon frosting might be nice too. Or just melted fairtrade dark chocolate over the top... mmm that would be good!

This is an awesome cake!

I'm a huge fan of carrot cake, and this one is a winner. I was a little nervous that this one is without added oil, but the result is amazing. Thank you for sharing!
