Polenta misfortune - who can improve my cooking fortune

I've tried to make this tortilla pancakes yesterday, with the polenta-cornflower from the blue-kind.\

But somehow the dow never got stable enough to form thin pancakes.
I've added water, salt, bit of oil, .. what went wrong?

Hm. I have no clue. It worked

Hm. I have no clue. It worked real well for us, but we only made a crunchy cracker like flat bread, used to make tacos. You should look at some normal pancake recipes, and see what the ingredient is that makes them fluff up.
